Being able to eat and drink only clean food and water clearly will protect the traveler from diarrheal illness. Unfortunately this is often impossible to do, because food preparation is being done by the staff of the hotels, resorts, and cruises. A few simple suggestions may help in avoiding the riskiest foods. Avoid fresh vegetable salads, unless they have been disinfected. (This is usually not done in restaurants, but can be done easily in a home kitchen.) Avoid eating fruits that cannot be peeled, such as strawberries or grapes; fruits that can be peeled, such as bananas or oranges are safe no matter where they come from. Avoid eating poorly cooked meat or fish. Avoid eating from food vendors on the street, unless the food is piping hot. Remember that coffee and tea are always safe, because the water has been heated during preparation (Table 50-2).
